About this template
This food safety quiz checks the hygiene basics every kitchen and front of house team needs: temperature control, fridge storage, handwashing, allergens, cross contamination, and when an ill member of staff can come back. It marks itself, so a manager sees who passed without grading anything by hand.
The allergen question is written for front of house, because that is where the risk sits. A server who guesses whether a dish contains nuts is a far bigger danger than a cook who stores a tray on the wrong shelf.
The last question is marked all or nothing, so staff must pick out the safe practices and leave the unsafe ones unticked. Guessing every box scores zero.
Temperatures and exclusion periods differ between countries. Check the figures against the food safety rules where you trade and change the answers before sending the quiz to your team.
